Ingredients

  • 1 large cucumber peeled if waxed
  • 2 green apples Granny Smith or Honeycrisp
  • 1 cup baby spinach or kale for a stronger flavor
  • 1 small handful fresh mint
  • ½ lemon peeled
  • ½- inch fresh ginger optional for gentle spice
  • 1 cup cold water if using a blender

Equipment

  • juicer or blender

Method

If Using a Juicer:
  1. Wash and prep all your produce. Peel the lemon, and chop the apples and cucumber to fit your juicer chute.
  2. Juice the spinach and mint first, followed by the apples, cucumber, lemon, and ginger.
  3. Stir well, taste, and adjust — add a bit more lemon if you like it brighter or a touch more apple for sweetness.
  4. Serve immediately over ice or chill for 15–20 minutes before drinking.
If Using a Blender:
  1. Add cucumber, apples, spinach, mint, lemon, ginger, and cold water to the blender.
  2. Blend on high until smooth.
  3. Strain the mixture through a fine mesh sieve or cheesecloth into a bowl or large glass.
  4. Discard or compost the pulp, and pour the vibrant green juice into a glass.
  5. Chill and enjoy right away for the most nutrients and flavor.

Notes

zChoose fresh, crisp produce: The flavor of your juice depends on freshness. Firm cucumbers and bright green kale will give a cleaner, sweeter taste.
  • Adjust sweetness naturally: Add half a green apple for lighter sweetness or a full apple if you like it fruitier.
  • Juicer vs. blender method:
    • Juicer: Simply feed all ingredients through and stir before serving.
    • Blender: Add ¾–1 cup cold water, blend until smooth, then strain with a fine mesh sieve or nut milk bag for a smoother texture.
  • Chill before drinking: Green juice tastes most refreshing when cold. Serve over ice or refrigerate 20–30 minutes before sipping.
